how to defrost meat safely

I’ll admit something.

There have been mornings when I’ve remembered that I planned to cook chicken for dinner…

…and then realised the chicken was still frozen solid. 😅

So naturally, I started looking for the fastest way to defrost it.

And like many people, I used to think:

“Just leave it on the kitchen counter. It will thaw eventually.”

But that’s actually not the safest way to do it.

If you regularly buy meat in bulk and keep it in the freezer, knowing how to defrost it properly is just as important as knowing how to store it.

Here’s what you need to know.

What Is the Safest Way to Defrost Meat?

There are three recommended ways to safely thaw frozen meat:

  1. In the refrigerator
  2. In cold water
  3. In the microwave

What you shouldn’t do is simply leave frozen meat sitting on the kitchen counter at room temperature. Food-safety guidance recommends against this because parts of the meat can become warm enough for bacteria to multiply while the centre is still frozen.

1. Defrost Meat in the Refrigerator

This is my favourite method when I remember to plan ahead.

Simply move the frozen meat from the freezer into the refrigerator and allow it to thaw gradually.

It takes longer, but there’s a big advantage:

You don’t have to cook it immediately once it has thawed.

For example, smaller cuts of beef may thaw within a day, while larger bone-in pieces can take two days or longer.

So if you’re planning Sunday dinner, moving your meat from the freezer to the fridge on Friday or Saturday can save you the last-minute panic.

My simple rule:

Tomorrow’s dinner? Move the meat today.

2. Defrost Meat in Cold Water

Forgot to take the meat out of the freezer?

This method is much faster.

Keep the meat in an airtight package or leak-proof bag and place it in cold water.

Change the water every 30 minutes so it stays cold.

Small packages can thaw relatively quickly, while larger pieces will take longer.

But there’s one important thing to remember:

Meat thawed using the cold-water method should be cooked immediately.

3. Use the Microwave When You’re Really in a Hurry

Sometimes dinner is in 30 minutes and you’re looking at a frozen chicken like:

“How did we get here?” 😂

That’s when the microwave can help.

Use the defrost setting according to your microwave’s instructions.

But because some parts of the meat may begin warming or cooking during microwave defrosting, the meat should be cooked immediately after thawing.

This isn’t the method I’d choose for every meal, but it’s useful when you need something quickly.

Can You Defrost Meat on the Kitchen Counter?

It’s best not to.

This is probably one of the biggest mistakes people make.

Leaving meat at room temperature may allow the outside to warm into a temperature range where bacteria can multiply while the inside is still frozen.

So even if you’ve done it for years without a problem, it’s safer to use the refrigerator, cold water or microwave instead.

Can You Refreeze Meat After Defrosting?

It depends on how you thawed it.

If meat has been thawed in the refrigerator, it can safely be refrozen without cooking, although the quality may change somewhat.

If you’ve thawed meat using cold water or a microwave, it’s better to cook it first before freezing it again.

What About Chicken, Beef and Goat Meat?

The same basic safe-thawing principles apply to your everyday proteins.

🐔 Chicken

If you know you’ll be cooking chicken tomorrow, move it from the freezer into the refrigerator today.

For a quicker option, use cold water and cook immediately after thawing.

🥩 Beef

Larger beef cuts can take considerably longer to thaw in the refrigerator.

For example, USDA guidance notes that some whole roasts can take two days or longer.

So don’t wait until dinner time to start thinking about it.

🐐 Goat Meat

Goat meat can also be thawed safely in the refrigerator, cold water or microwave.

For large portions, refrigerator thawing is usually the easiest approach because you can plan ahead and keep the meat safely chilled while it defrosts.

One Trick That Makes Everything Easier

Portion your meat before freezing it.

Instead of putting several kilograms of chicken or goat meat into one huge bag, divide it according to the meals or quantities you’ll actually use.

That way, you don’t have to defrost everything just because you need enough meat for one meal.

It’s a small habit, but it makes freezer management much easier.

And This Is Why Packaging Matters

I’ve realised that good meal preparation doesn’t start when you turn on the stove.

It starts much earlier.

It starts with how your meat is processed, portioned, packaged, stored and eventually prepared.

That’s one of the things we pay attention to at Beem Farms.

Our proteins are hygienically processed and carefully packaged so they’re easier to store and prepare when you need them.

Whether you’re stocking up on:

🐔 Raw Chicken
🐐 Goat Meat
🐏 Premium Ram
🥩 Beef
🐟 Fish
🍗 Shredded Chicken
🔥 Smoked Meats

the idea is simple:

Make quality proteins easier to keep at home and easier to turn into meals.

The Easiest Rule to Remember

If you’re wondering how to defrost meat safely, remember:

Planning ahead → refrigerator.

Need it faster → cold water.

Need it immediately → microwave, then cook straight away.

Kitchen counter → avoid it.

And honestly, planning ahead is probably the easiest one.

Because there’s nothing worse than getting home hungry, opening the freezer and discovering the chicken you wanted to cook is still frozen solid. 😭

A little preparation can save you a lot of stress later.

Good food starts with good handling.

And sometimes, the best kitchen hack is simply remembering to move the meat from the freezer the night before. ❤️

Frequently Asked Questions

How long does it take to defrost meat in the fridge?

It depends on the size and type of meat. Smaller cuts may thaw within a day, while large bone-in cuts and roasts can take two days or longer.

Can I defrost chicken on the counter?

It’s not recommended. Frozen chicken should be thawed in the refrigerator, cold water or microwave instead.

Can I cook meat immediately after defrosting it?

Yes. Meat thawed in cold water or the microwave should be cooked immediately.

Can I refreeze meat after thawing?

Meat thawed in the refrigerator can safely be refrozen, although its quality may be affected. Meat thawed using cold water or a microwave should generally be cooked before being refrozen.

What is the best way to defrost meat?

For most situations, thawing in the refrigerator is the easiest and safest method because it keeps the meat at a safe temperature while it gradually defrosts.
